We dehydrate Scotch Bonnet Peppers grown by Herb at Hydroponic Harvest in Georgetown. Then we roast them up a little and throw them in with all the usual suspects of a jerk seasoning. Heat and flavor. It's so so good. And when it's gone, it's gone. Well, gone until we stockpile enough peppers to make another batch!
