This is a great blend for slow-roasting meats. You can use this blend as a rub or to flavor a more traditional barbacoa sauce! The flavor on this one is earthy and comforting. It's great for tacos, burritos, and rice bowls.
Organic* ingredients:
garlic*, cumin*, ancho chili pepper*, black pepper*, chipotle chili pepper*, clove*
Barbacoa recipe!
3 pounds chuck roast
5 cloves garlic
4 chipotles in adobo sauce (or more if you're feeling fiesty)
1/4 cup lime juice
2 Tablespoons apple cider vinegar
2 heaping Tablespoons Barbacoa blend
1 1/2 cups beef broth
Salt and pepper to taste
Preheat your oven to 300*F.
Cut your meat into large chunks and coat with salt and pepper. Heat up your Dutch oven on medium-high, brown the chunks on all sides. Don't crowd the pan, you may need to do this in batches. If you're good at multi-tasking you can make the sauce while you brown the meat.... if you struggle with doing more than one thing at a time, don't sweat it, just brown the meat and then make the sauce, heck, you could make the sauce and then brown the meat, you do you.
For the sauce combine 5 cloves garlic, 4 chipotles in adobo sauce, 1/4 cup lime juice, 2 Tablespoons apple cider vinager, 2 heaping Tablespoons Barbacoa blend, 1 1/2 cups beef broth in a food processor, blender, or use an immersion blender to blend it all up and make a nice sauce.
Now you've browned your meat, you've made the sauce, the oven is preheated, it's time to put it all together! Throw all the meat in the Dutch oven and pour the sauce over, making sure it's all covered. Throw the lid on that bad boy and let it roast for 2.5 to 3 hours or until the meat is tender enough to fall apart. Once it's done, shred the meat up and enjoy it however you choose! Tacos, quesadillas, burritos, rice bowls!
If you don't have a Dutch oven, once you've browned the meat, throw it in a casserole dish, pour over your sauce, cover it tightly with aluminum foil and proceed with the cooking!
